The story
At Rozdział in Warsaw, Konrad Kowalski approaches contemporary cuisine as a continuous experiment rather than a fixed category. He built this kitchen after years living in Britain, where dining alongside travelers from multiple continents taught him to map flavors without borders. His partner Karolina works as both co-founder and sous chef, translating those global lessons into plates that prioritize texture and seasonal produce. This collaborative method recently secured a 14.5 score from Gault&Millau, which highlighted the venue’s disciplined yet inventive direction.
The dining room offers both a five-course tasting menu and an à la carte selection, with a complete vegetarian progression available for guests who prefer plant-based courses. Smoked Loch Duart salmon appears alongside radish, cilantro, wasabi ponzu, and a fresh oyster, while beef tartare relies on bear garlic capers and olive oil for depth. Main courses shift toward grilled halibut paired with tarragon sauce and Antonius Oscietra caviar, or roasted lamb accompanied by eggplant, charred onion, and goat cheese. This steady approach to modern European cooking lets precise seasoning and contrasting temperatures carry the focus.
Located along the Powiśle riverbank, the interior mixes exposed brick, brushed steel, and warm wood panels to create a quiet backdrop for conversation. Large windows flood the room with daylight during service hours, then transition to focused spotlights that highlight table settings without washing out the space. Greenery softens the industrial edges, while the open kitchen allows diners to watch plating unfold behind the pass. That deliberate balance of material and light aligns with the venue’s broader aim to deliver comfort without sacrificing precision.
