The kitchen and its foundation

At Senses in Amsterdam, chef Renaud Goigoux builds a modern French-Japanese cuisine rooted in local harvests. He arrived from Clermont-Ferrand after stints at Daalder, Breda, and Rijks* before taking over the kitchen in June 2023. His approach balances classic French sauces with precise Japanese cuts and Dutch ingredients. North Sea scallops and Amsterdam-aged cheeses appear alongside carefully sourced meats.

Seasonal plates and vegetable focus

Guests choose between three and seven course tasting journeys or a structured à la carte selection. The kitchen operates from a strong vegetable base, which allows them to prepare fully vegan menus without treating them as afterthoughts. Delivery bicycles bring morning supplies to the canal-side entrance while staff track every scrap to minimize waste. Red Mazara prawns rest beside white asparagus, while stuffed bottini arrive with water buffalo cheese.

The dining room sits inside The Albus Boutique Hotel just four minutes from the Rembrandtplein tram stop. Patrons sit above a visible wine cellar that stores bottles picked for texture and acidity.
