The story

Wyraj Warsaw: Slavic Cuisine with Michelin Bib Gourmand | Warsaw Restaurant

A Slavic Feast in the Heart of Warsaw

In the bustling city of Warsaw, Wyraj offers a dining experience that feels both ancient and refreshingly new. The restaurant's name evokes a mythical paradise where souls rest and feast among deities, and its menu is a thoughtful exploration of Slavic culinary heritage. The kitchen revives old recipes and presents them in a contemporary light, focusing on regional ingredients and traditional techniques.

Wyraj’s approach to dining is structured around the Slavic cycle of day and night. The "Uczta Dzień" (Feast Day), available on weekends until 1:00 PM, features open-faced sandwiches on artisan bread and the oldest form of bread, the flatbread, topped with a variety of ingredients. For a longer breakfast feast, the "pieniek staropolski" is a wooden board laden with regional cheeses and cured meats. As evening falls, the "Uczta Noc" (Feast Night) begins. Candles are lit, the lights dim, and the meal progresses through "popasy" (Slavic tapas), "zalewajki" (soups), the main "obiata" (always including fish, vegetarian, poultry, and game), and finally "wety" (desserts). The entire feast is complemented by exceptional drinks from Polish producers.

This commitment to quality and value has not gone unnoticed. Wyraj was awarded the Bib Gourmand by the Michelin Guide in 2025, a prestigious recognition for restaurants offering excellent food at a reasonable price. It is a testament to the kitchen's ability to deliver exceptional Slavic cuisine without pretense, making it a standout in Warsaw's dining scene.

Interior and Atmosphere A small restaurant is located in the rear section of the Browary Warszawskie complex. Wall tapestries in shades of green, yellow, and muted red, oak furniture, two beautiful bars—one clad in ceramic, the other featuring a marble countertop—along with dark yellow glass panels, all create a warm and cozy atmosphere; round designer lamps add a modern touch. Kitchen and Chef The menu draws inspiration from Slavic cuisine—not only through the selection of local and seasonal ingredients, but also through the names of the dishes on the menu. This is a place worth bringing foreign guests to, to introduce them to traditional Polish cuisine. A very interesting selection of wines—all Polish—along with domestic distilled spirits, okowit, and fruit liqueurs. Even more noteworthy are the non-alcoholic beverages, including herbal and fruit infusions.
