The story
On the sixth floor of Wrocław’s historic Hotel Monopol, Acquario (Ristorante Acquario) pairs modern cuisine with a panoramic view of the city’s old town. The restaurant’s glazed walls and spacious terrace make the setting as compelling as the plate.
The kitchen is led by Chef de Cuisine Mariusz Kozak, whose career began at Westminster Kingsway College and included eight years in top London restaurants working with Gordon Ramsay, Marcellin Marc, and Monica Galetti. Back in Poland, he refined his approach at Brasserie Warsaw and Food Art Gallery before bringing his passion for French technique and elegant flavor combinations to Acquario. His inspiration comes from travel, professional literature, and everyday ingredients.
The menu changes monthly, built around seasonal products. A five-course tasting menu is available daily, with an optional wine pairing selected by the sommeliers. The wine list is notably rich, with a strong Italian focus alongside French and Spanish selections. A la carte options include starters like grilled lobster with Caesar salad and tarragon, agnolotti with lamb and labneh, and peanut velouté with foie gras. Main courses range from Skrei cod with white bean ragout to chargrilled rib eye with pomme dauphine.
The restaurant’s modern open kitchen and minimalist aesthetic reflect its focus on precision and clarity of flavor. This approach has earned Acquario a Michelin recommendation, a recognition that speaks to the consistency and ambition of the kitchen. For those who prefer to dine at home, a delivery service is available, with a 20% discount on wine orders.
Acquario is open Tuesday through Saturday from 18:00 to 22:30, with last orders at 22:00.
