The chef named the restaurant Frog, viewing it as a challenge that would either sink or swim, a mindset reinforced by his rigorous apprenticeship training at Scotland's Gleneagles Hotel. After a world-travel period that instilled a strict zero-waste philosophy, Handling returned to London to build a kitchen rooted in resourcefulness and Scottish discipline.

Adam Handling MBE began his career as an apprentice at Gleneagles, a background he cites as the primary reason for his current standards. His cooking balances Scottish roots with techniques absorbed abroad, particularly a Japanese-inspired dedication to eliminating waste. This philosophy shapes every plate, allowing the menu to prioritize what Britain offers now while leaving room for future innovations. Handling describes the culinary identity as ninety percent British produce supported by ten percent of what the country cannot yet cultivate.

Guests navigate a thirteen-course tasting menu at £199 per person or opt for the concise lunch service at £100.
