In Wrocław’s Bastion Sakwowy, a 16th-century fortification has been transformed into a dining room. Gustaw takes its name from Gustaw Liebich, whose brother Adolf built a grand neo-Renaissance complex here in the 1800s, turning the hill into a cultural hub. Today that legacy lives on, not in heritage alone, but on the plate.

Chef Kacper Sawoń’s vision

Chef Kacper Sawoń leads the kitchen, drawing inspiration from 19th-century Polish and Breslau menus. Working with high-quality local products, he gives those old recipes a modern, personal interpretation. The result is contemporary cuisine that feels grounded in place and time, yet entirely of the moment.
