Chef Mariusz Kozak

Chef Mariusz Kozak trained at London’s Westminster Kingsway College and refined his craft in the kitchens of Gordon Ramsay and other renowned chefs before returning to Poland. He brings a French-inspired precision to Polish ingredients, creating modern Polish cuisine that honours old recipes while feeling thoroughly modern. His inspiration comes from travel, everyday moments, and a deep respect for culinary literature – he considers Larousse Gastronomique essential.

Interior and Atmosphere Situated on the ground floor of Wrocław's Monopol Hotel, it is one of the hotel's two restaurants (the other being Acquario on the sixth floor) – the more casual of the two. Large windows, marble columns, and Art Deco decor lend an air of elegance to the spacious interior. Cuisine and Head Chef The concise menu, built around high-quality fresh ingredients, offers classic dishes with a modern twist; standout items include perfectly pan-seared sea bass. The excellently prepared vegetable sides accompanying the main courses are also worth noting – they are consistently crisp and well-seasoned. The restaurant also boasts an exceptionally extensive wine list, primarily featuring Italian selections, along with French and Spanish options. The Wrocław Opera House is located nearby. Monopol is an excellent spot to arrange dinner with friends before or after a show.
