POETREE’S restaurant in Zakopane brings refined fine dining to the seventh floor of Hotel Permon. Chef Igor Janiga guides the kitchen with a focus on precise technique and seasonal sourcing. Some produce arrives directly from the hotel’s own farm, while other ingredients travel up from the surrounding valleys. This dedication to quality secured a 14-point Gault&Millau rating for 2026, recognizing the consistent execution across every course.
Guests navigate five or nine course curated menus designed to highlight regional produce through mountain cuisine. The pike perch stands out alongside roasted courgette, browned butter, and a pumpkin purée finished with tangy ponzu gel. Beef shoulder follows with truffle mashed potatoes presented inside a crisp fried potato spiral. Even the opening bread basket features house-made sourdough and gluten-free flaxseed crackers paired with freshly churned butter.
Natural light floods the elevated room, framing uninterrupted mountain vistas through large windows. An open kitchen allows diners to watch the pacing of each plate, while staff adjust service to match individual preferences. Behind the bar, an extensive wine cellar holds selections tailored to complement the gourmet cooking.
