The story
Hool sits at Largo da Oliveira, in the historic center of Guimarães, part of Hotel da Oliveira but with its own distinct identity. The atmosphere is refined yet welcoming, and the outdoor terrace overlooks the square, offering a relaxed setting for a meal.
Since 2021, Hool has held a Michelin Plate, and in 2026 it earned a Michelin Recommended distinction. The kitchen is led by executive chef Liliana Moura, under the guidance of consultant chef Vítor Matos. Their cuisine is of Mediterranean influence, creative and multi-sensory, using fresh, genuine products from producer to table, transforming ingredients without masking their essence.
Vítor Matos, the master behind the experience, brings decades of experience from Switzerland and Portugal, including roles at Vidago Palace and Casa da Calçada. His cooking is rooted in seasonal and regional products, resulting in a modern cuisine that respects tradition. Liliana Moura, a Minho native with Transmontano roots, discovered her passion for cooking later in life. She now commands the daily operations, crafting the multi-sensory moments that define a meal at Hool.
Dinner at Hool is a single tasting menu, available in five or nine moments. It is the only service offered in the evening, allowing the kitchen to focus entirely on a cohesive progression of flavors. A carefully curated wine list complements the experience.
Hool holds Green Key certification and ISO 14001, committing to sustainable practices: local, seasonal, and organic produce. In warmer months, the Esplanada da Oliveira terrace offers a lighter menu for casual dining.
