At CURA, located within the Ritz Four Seasons Hotel in Lisbon, the philosophy is one of meticulous curation. Chef and culinary curator Rodolfo Lavrador approaches ingredients as an artist selects paints — from the rich palette of seasonal Portuguese produce, he creates dishes of depth and meaning. Leading a team of nearly a dozen cooks, Chef Lavrador champions curiosity as the key to creativity. He encourages constant experimentation with new products — flowers, vegetables, fermentations — to bring fresh perspectives to familiar flavours. Sous Chef Marina Garcia works alongside him, ensuring quality and exploring sustainable practices, including alcohol-free pairings in collaboration with the sommelier. Together, they craft a modern cuisine that honours Portuguese tradition.
The dining experience unfolds through two tasting menus. The Percurso (EUR 185) journeys through traditional Portuguese recipes and diverse techniques, with Portugal as the guiding thread. The Passo (EUR 155) offers an epitome of the restaurant’s gastronomic path. Both are available in vegetarian versions. Signature dishes include Arroz, trigo sarraceno e azeitona (rice, buckwheat and olive); Enguia fumada, couve roxa, maçã Granny Smith e aneto (smoked eel, red cabbage, Granny Smith apple and dill); Camarão vermelho, açorda e planta do gelo (red shrimp, açorda and ice plant); and a sourdough bread made from ancient wheat varieties.
