Joachim Koerper fell in love with the ingredients and traditions of Southern Europe long ago, and today he is widely recognized as a master of Mediterranean cuisine. His cooking philosophy is straightforward: “I work exclusively with products in season.” This dedication to freshness and locality defines the gastronomic concept at Eleven. Koerper adapts his creativity to the environment, recreating traditional recipes and finding new ways to use ingredients from local markets.
To mark his fiftieth year in the kitchen, Koerper crafted a special menu that traces his life route, from his start in Germany through the countries that shaped him. “This Menu is a voyage through that life route, with culinary creations, based on the places that meant the most to me,” he shares. The result is a deeply personal tasting experience that reflects a half-century of mastery.
Eleven’s menus are built around the chef’s seasonal, Mediterranean approach. Guests can choose from options including the Eleven Menu, a Lobster Menu, and the Discovering Flavours Menu, all showcasing the best of what the markets offer.
