The story
In Lisbon’s Chiado district, just steps from the São Carlos National Theatre, Encanto is the vegetable-driven project of celebrated chef José Avillez. The restaurant’s subtitle — “o mundo vegetal encantado” — signals its purpose: an enchanted world where vegetables are the stars.
The space opened in March 2022 and quickly earned a Michelin Star in its first year. In 2025, the guide also awarded Encanto its Green Star, recognising the kitchen’s commitment to sustainability. The recognition is woven into every aspect of the operation.
Encanto serves a single tasting menu, entirely vegetarian, built around approximately twelve moments. This is not a kitchen that treats vegetables as a supporting act. Legumes, leaves, seeds, algae, mushrooms, flowers, fruits, eggs and cheeses are prepared with precision and presented with a sense of surprise. The menu changes with the seasons, designed to showcase the best of each harvest.
About 85% of ingredients are bought directly from carefully selected local producers. Roughly 90% of the vegetables and fruits are organic. Some produce comes from Casa Nossa, Avillez’s own farm in the Alentejo, near the Alqueva reservoir. Technique and creativity serve the product, not the other way around.
Head Chef Diogo Formiga leads the kitchen. With a degree in Biology and a master’s in Marine Biology, he brings a research-driven approach to ingredient sourcing and waste reduction. In 2025, The Best Chef Awards distinguished him with 1 Knife.
The front of house is led by Inês Jones, head sommelier and maître d’, who has been with Encanto since opening day. The wine list focuses on biodynamic bottles, alongside artisanal beers, house-made juices, infusions and kombuchas.
