The story
At EPUR in Lisbon’s Chiado district, Chef Vincent Farges cooks with the confidence that comes from more than two decades in the kitchen. “At 40’s you know yourself, you know what your culinary identity is,” he says. Here, that identity is expressed through plates that are simple but technically sophisticated, where every element has a purpose.
Farges describes his cooking as “food that makes sense.” He sublimates ingredients, creating minimalist plates with just two or three flavours. Nothing superfluous. The result is restrained, real, and genuine—a cuisine that draws on French techniques for fine dining while embracing inspiration from Portugal, Asia, and beyond. It is a cooking of emotions, generosity, and shared pleasure around the table.
EPUR offers two tasting menus. Inspirações (€150) begins with an amuse-bouche of hamashi, cedrat, and nasturtium, then moves through catch of the day with sea urchin and elderflower, black pork with cabbage and sage, and a dessert of cherry tomato, strawberry, and basil. Epurismo (€185) expands to eight courses, adding foie gras with oyster and Meyer lemon, red prawn with cockscomb and fava bean, and a closing chocolate, buckwheat, and miso creation. Both menus are available with carefully selected wine pairings.
The restaurant occupies a ground-floor space on Largo da Academia Nacional de Belas Artes, in the historic heart of Lisbon. It is open for lunch on Saturdays and for dinner Tuesday through Saturday.
EPUR has held a Michelin star since 2019, a reflection of the high quality cooking that defines Farges’s work. The restaurant has also been named Best New Restaurant in Portugal by Mesa Marcada and received a Silver Fork from Jornal Expresso. The press has praised Farges’s ability to purify the kitchen and activate the senses—a philosophy that continues to guide every plate that leaves his pass.
