The elevator ride takes fifty seconds. When the doors open, you are 120 meters above Lisbon, inside the Vasco da Gama Tower, at Fifty Seconds. Here, chef Rui Silvestre leads a kitchen that has earned a Michelin star for its precise, personal take on contemporary seafood.

Silvestre’s path to this sky-high dining room began in Valongo, though he grew up in the Algarve from age ten. After seven years cooking in France, Switzerland and Hungary—including a formative stint at the three-Michelin-starred Le Castellet with Christophe Bacquié—he returned to Portugal. At 29, he became the youngest Portuguese chef to earn a Michelin star, a feat he repeated in the Algarve before taking the helm at Fifty Seconds.

His cooking marries French technique with the ingredients he knows best: fish and shellfish from the Atlantic, combined in ways that feel inventive yet grounded. The tasting menu is built around the sea, with spices and unexpected pairings that reveal a global curiosity while preserving the integrity of local produce. As the restaurant itself describes it, the experience is a journey through “sabores de todo o mundo”—flavours from around the world.

The dining room sits within the Myriad by SANA hotel, with floor-to-ceiling windows that frame the Tagus River and the city below. The atmosphere is refined but unhurried, the kind of place where every detail—from the wine list to the smart-casual dress code—has been considered. A wine cellar, private dining options, and a chef’s table are available for those who want to go deeper.

Fifty Seconds is open for dinner Tuesday through Saturday, with a Saturday lunch service. The menu is a tasting format, focused on contemporary seafood, and the kitchen asks to be informed of dietary restrictions 48 hours in advance. Reservations require a prepayment, fully deducted from the final bill.

At this altitude, the view is spectacular. But the reason to return is what lands on the plate.
