The story
In the historic Rua dos Fanqueiros, in Lisbon’s Baixa district, Terroir opened on 5 August 2020, the realisation of a dream by owners Inês Santos and Erik Ibrahim. The name itself signals the restaurant’s philosophy: a deep respect for the land and the ingredients it yields, expressed through modern cuisine.
The kitchen is led by Chef Guilherme, born in Lisbon in 1994. His CV includes stages at Ocean, Fortaleza do Guincho, and Fifty Seconds by Martín Berasategui, but at Terroir he has found the “perfect soil” to develop his own cooking. His approach is rooted in simplicity and quality produce, using techniques from around the world to showcase Portuguese ingredients. The result is a cuisine that is both grounded and adventurous.
The dining room team, described by the restaurant as having deep experience in the art of service, pairs each dish with a carefully curated selection of Portuguese wines. The atmosphere is friendly and relaxed, designed as a place for friends and family to discover new flavours.
Two tasting menus are offered: an eight-moment journey and a shorter five-moment option, both with vegetarian versions available. The menus change regularly, following the seasons and the chef’s new creations. Wine pairing is available for each.
Terroir’s commitment to quality and creativity has been recognised by the Michelin Guide, earning a Recommended distinction for 2026. It is a place where the focus remains firmly on the plate, the product, and the experience of sharing a meal.
