Terruja: A Taste of the Serra de Aire e Candeeiros

In the village of Alvados, near Monsanto, Terruja is the deeply personal project of Chef Diogo Caetano. It is, in his words, a nature-based restaurant—an extension of his own dining room in his homeland. The chef, who has cooked in Michelin-starred kitchens like Belcanto and internationally acclaimed restaurants in Estonia, has returned to his roots to build something profoundly local.

The project is built on a simple, powerful idea: to honor the Serra de Aire e Candeeiros region. Rather than imposing a distant culinary concept, Chef Diogo Caetano looks to the natural heritage—the people, the landscape, and the traditions—of his home territory. At Terruja, the cuisine is author-driven but grounded in the local geography, taking traditional products and producers from the area and reinventing them for a contemporary table.

The menu reflects this philosophy. Guests can choose between a degustation menu—nine moments for €75—or a carefully composed à la carte. The cooking is honest and precise: a starter of scallops, seared with pork jowl and coral emulsion; a main of fish from the Nazaré market, paired with shrimp tartare and a bisque; or a hare feijoada with cabbage, prepared “as a grandmother would.” The wine pairing lists five moments at €50 per person, with a non-alcoholic option also available at €40.

The setting is warm and welcoming, with air conditioning for comfort and outdoor seating for temperate evenings. Terruja earned a Michelin Bib Gourmand in its first year—recognition for good quality, good value cooking that stays true to its place. For Chef Caetano, this is the continuation of a story that began with his youth spent in the fields of this very region, where the connection between food and identity was forged. At Terruja, that connection is alive on every plate.
