The story
MAPA is a contemporary restaurant at L’AND Vineyards in Montemor-o-Novo, Portugal, where the cuisine is a deliberate reflection of Portuguese culture and identity. The restaurant’s philosophy is rooted in the country’s maritime history—the voyages, the spice routes, and the encounters between West and East that shaped a global culture. Each season, MAPA offers a new expedition, translating this heritage into a tasting menu that evolves with the ingredients and influences of the time.
Chef Miguel Laffan leads the kitchen, having returned to MAPA after a decade of building a deep connection with the territory and the team. Laffan’s approach is grounded in relentless research, rigor, and a belief that the freshness of ingredients—and the mental freshness of those who transform them—is paramount. He reinterprets the roots of Portuguese gastronomic culture in a contemporary way, blending flavors and influences from his travels around the world, incorporating secret and exotic ingredients. He works closely with Sub-Chef Carlos Galhardas, Pedro Pinho, and David Pincante, a team that has been with him since 2011.
The setting extends beyond the dining room. Café da Viagem, a wine bar with a terrace and lake deck, is inspired by the sea routes to Asia. It offers contemporary fusion gastronomy, signature cocktails, and a wine list that showcases the Alentejo region and beyond. It is a place to relax and let the world go by.
MAPA’s recognition by the Michelin guide reflects the ambition and execution of this project. It is a space for the contemporary interpretation of Portuguese cuisine, celebrating national identity at the table, reimagined through the lens of the maritime journeys that shaped the culture.
