Reinvention and Return

Mito spent time in “total preservation,” a period of cold storage while its DNA matured. The restaurant’s own words describe it as a necessary shock treatment, a deep freeze at –196°C. Now the lights are back on, the burners are lit, and the kitchen is in full swing. This is Mito 2.0, a restaurant that has consciously rebuilt itself. The Michelin Recommended distinction for 2026 acknowledges that the reinvention was worth the wait.

The Menu

The cooking at Mito is contemporary Portuguese, rooted in classic flavours but never afraid to push. The menu reads like a conversation between tradition and curiosity. You’ll find a rump steak tartar with wine-and-garlic marinated yolk, labneh, and flat bread, alongside a Bola de Berlim reimagined with pata negra ham and bacon. A monkfish and shrimp rice for two is built on Carolino rice from the Sado region, spiked with sriracha and curry. For meat lovers, there’s a 45‑day dry‑aged entrecôte and a 20‑day dry‑aged black pork chop. The kitchen also shows a deft hand with vegetables: a carrot in misosuke with apricot chutney, or sweet potato gnocchi in a seaweed “caldeirada.”

A Drinks Program to Match

The cocktail list extends the same philosophy. Classics are revisited with Portuguese ingredients—a Negroni del sud uses medronho and fig gastrique, while a Margarita de p*ta madre gets a hit of miso and kimchi salt. The wine list, curated by head of service Priscila Lopes, focuses on low‑intervention producers from across Portugal, with a spotlight on women winemakers. It’s a thoughtful, cohesive experience, from the first bite to the last sip.
