The story
Chef João Dias trained at the Faro School of Hospitality and Tourism, then interned at Vila Vita and Vila Joya, two of the Algarve’s most respected kitchens. He worked in France, Brazil and Macau before returning to the Algarve to open his own restaurant in Tavira: À Mesa.
The dining room is welcoming and intimate, where sustainability meets refinement. Every detail is designed for comfort and genuine hospitality. The cooking is modern Portuguese, inspired by the richness of local flavours and consciously sourced products.
Chef Dias offers several tasting menus that showcase his precision and respect for ingredients. The Saudade menu leads with chef’s appetizers, sea bass with lemon, pork shoulder with corn porridge, and persimmon with lavender. For a vegetarian option, the Landscape menu includes black garlic and mushroom Carolino rice, courgette, pumpkin and miso, and a truffled egg. The Land Ahoy menu adds oyster with raspberry, codfish with coastal prawn, duck with carrot, and banana with sesame. The Inspirations menu extends to scarlet shrimp, coastal fish with spices, and chocolate with tequila.
Wine pairings are curated by sommelier José Balicha, with options ranging from €28 to €95. À la carte dishes start with snacks like Algarvian oyster and crispy mackerel tartare, move through starters such as creamy codfish with local prawn and basil, and main courses like black pork tenderloin with seafood xerém or sea bass with coriander and lemon rice.
À Mesa was awarded a Michelin Recommended distinction for 2026 – a recognition of its refined modern cuisine and the chef’s thoughtful approach. It’s a place where global experience meets the local pantry, with clean flavours, seasonal ingredients, and a calm, unhurried atmosphere.
