The story
Dell’arte in Moscow builds its reputation around a refined approach to modern cuisine. The project began when Chef Robbert Dellaert converted his family home into a dining room. He keeps the kitchen completely open so guests can observe every step of the process. The dining capacity stays intentionally small to maintain an intimate pace. Inventive techniques replace heavy sauces, leaving plenty of room for ingredient clarity.
The original house structure remains intact alongside a newly added glass extension. Built-in shelving and custom cabinetry reinforce the residential scale. This architectural shift creates a bright dining area that feels connected to the neighborhood. Wooden floors and neutral tones set a quiet backdrop for conversation. The open kitchen sits at the center of the layout, allowing the rhythm of service to guide the evening.
A Gault&Millau score of fourteen reflects the consistent execution of Dellaert’s menu. Portion sizes remain generous while presentation stays deliberately understated.
