Fresh in the water, tasty on the shore, the fragrance can be smelled from ten miles away. The ingredients from the water and shore within ten miles mainly come from one sea, two rivers, three lakes, and four mountains. "Water" refers to the East China Sea in the sea, the Qiantang River and Fuchun River in the two rivers, and Yangcheng Lake, Taihu Lake, and Qiandao Lake in the three lakes. While the "shore" represents the four mountains, Tianmu Mountain, Moganshan, Tiantai Mountain, and Yandang Mountain. The delicacy of Jiangsu and Zhejiang lies in the seasonality. In Tianmu Mountain, we pick spring vegetables; in Fuchun River, we catch river fish in summer; at Xiangshan Port by the East China Sea, we harvest seafood in autumn; and by Dongqian Lake, we enjoy the abundance of winter. Spring, summer, autumn, and winter, each season has its own charm. Guided by the 24 solar terms, we eat in harmony with the seasons, which is also the operational feature of the water and shore.
