Master chef Dejan Stanković and head chef Branko Jovanović built the menu around a direct mapping of twenty distinct Italian territories. Each plate reflects specific local techniques rather than a generalized national style. The kitchen maintains strict standardization procedures while actively reducing food waste during preparation.

Recognized with a 12.5 score from Gault&Millau, the kitchen ensures carefully sourced ingredients allow natural aromas to lead each course without heavy interference. Diners frequently order the Norcia casarecce, which combines homemade pasta with a rich alfredo sauce, slow braised beef ragù, fresh asparagus, and a precise touch of nutmeg.
