The story
THYME-STREET CUISINE & COCKTAILS in Belgrade operates at the intersection of casual street fare and refined dining. The kitchen treats street cuisine not as a quick fix, but as a canvas for precise technique and layered flavor.
Founders Krsta Simović, Nenad Atanasković, and Nikola Rosić built this Rajićeva location on a dual concept that blends nostalgic street classics with signature bistro plates. Atanasković brings formal training from Le Cordon Bleu and international line experience, while Rosić contributes development work rooted in Norwegian Michelin kitchens. Their approach favors honest ingredients and deliberate seasoning over gimmicks. The team rotates seasonal additions that keep the menu anchored in global street traditions without losing local clarity.
Gault&Millau’s recent 14.5 rating highlights the kitchen’s ability to balance texture and spice across its most requested items. The legendary gyozas arrive crisp and tightly sealed, while the pulled pork rests inside a soft steamed bun alongside smoked corn, coriander, and kulen sauce. A newer standout features glazed pork ribs wrapped in chilled iceberg leaves, finished with a Korean tartar and fresh herb garnish. Young veal appears tender and fragrant, prepared with a straightforward, homemade sensibility that lets the meat lead.
The space sits comfortably between a bustling eatery and a quiet neighborhood bistro. Large windows frame director chairs along the perimeter, while the central floor offers wider tables suited for shared plates. The interior maintains a strict no-smoking policy, which keeps the air clear during peak dinner hours. Service moves at a measured pace, allowing guests to sample multiple small formats before settling into mains or cocktails.
