Fleur de Sel – Fine European Dining with Danube Views in Novi Slankamen

Fleur de Sel is the gastronomic jewel of Atelje vina Šapat, set on the banks of the Danube in Novi Slankamen. The restaurant’s name, French for “flower of salt,” nods to the finest sea salt crystals that form on the water’s surface—and, symbolically, to the town of Novi Slankamen itself, with a thread of refined cuisine woven in.

The dining room offers panoramic views of the river, creating a serene backdrop for what the team calls a “gastronomic diamond.” The kitchen is led by chef Nikola Stojaković, who built his craft in some of Paris’s most prestigious three-Michelin-starred restaurants, including Four Seasons Hotel George V, Le Cinq, and Le Pré Catelan. Today, he brings that knowledge and passion to the flower of Slankamen.

The menu is built around dishes of special recipe, designed as elegant companions to the wines. The restaurant draws on its own winery’s labels, carefully selected bottles from Fruška Gora, and a curated choice of wines from the world’s most famous wine regions. This commitment to wine excellence earned Fleur de Sel a Wine Spectator Best of Award of Excellence in 2024.

The atmosphere is refined but welcoming, with a smart elegant dress code requested. Guests come for the interplay of tradition and contemporary European cuisine, where each dish is part of a larger gastronomic journey.
