The story
Ann Chin Popiah began in 1958 when Mr. Lim Kam Chwee, a Fujian immigrant, decided to put his family’s handmade popiah skin skill to work. After years as a coolie and a hawker assistant, he opened a stall in Singapore. More than six decades later, the family-run business is still going strong, earning a Michelin Recommended nod in 2026 for its unwavering commitment to traditional popiah.
The soul of any popiah is its skin. Ann Chin’s version is made from a wet, sticky wheat-flour dough that is twirled by hand and pressed onto a hot griddle for a few seconds. The result is a paper-thin, soft, and chewy wrapper – far superior to the thick, machine-made alternatives. Each sheet is then filled with a classic combination: steamed turnip, shredded carrots, lettuce, bean sprouts, crushed peanuts, housemade crispy bits, and a sweet-savoury sauce. The chilli paste adds a gentle kick. The handmade approach ensures the skin stays pliable and bursting with texture.
Ann Chin makes it easy to share the experience at home. Their DIY Popiah Party Set (18 rolls, S$40) includes everything needed: fresh handmade skin, cooked turnip with carrots, garlic, chilli padi paste, crispy bits, peanuts, lettuce, eggs, and both sweet and chilli sweet sauces. A Fun Sized Popiah Set (10 rolls, S$25) is perfect for smaller gatherings. For those who want to roll their own from scratch, handmade popiah skin is also sold separately (500g for S$12, yielding about 40 small pieces).
The menu also features Kueh Pie Tee, a beloved Peranakan snack of crispy pastry cups filled with a spiced vegetable mixture. Ann Chin offers DIY Kueh Pie Tee sets (50 cups from S$50; 30 cups from S$32) complete with shells, cooked turnip with carrots, crispy bits, eggs, and sauces. During festive periods, a Laksa Set (serves 8–9 bowls, S$50) is available – a rich, coconut-based Peranakan broth with prawns, fish cakes, tofu puffs, and thick vermicelli.
The flagship stall is at Chinatown Complex Market & Food Centre, #02-112, on Smith Street. With over a dozen outlets across Singapore – including Toa Payoh, Sin Ming, Ang Mo Kio, Clementi, and Compass One – and islandwide delivery (minimum S$35 order), Ann Chin’s handmade popiah is always within reach.
