Ishizawa is a new chapter in Japanese omakase dining in Singapore, led by Chef Takahiro Ishizawa—known to regulars as Ishi-san. With over twenty years of experience, including his tenure as head chef of the Michelin-starred Shinji by Kanesaka, Chef Ishizawa now brings his philosophy of continuous refinement to a counter of his own. The restaurant’s symbol, the crane, reflects longevity, prosperity and grace—qualities the chef channels into every course.
Born in Niigata, a region famous for its pristine rice, Chef Ishizawa calls himself a true sushi shokunin—an artisan on an endless pursuit to perfect his craft. He believes that balanced sushi begins with stillness within, achieved through discipline and unwavering focus. Alongside him is Chef Taro Yokomoto, raised in Ehime Prefecture. After training in Japanese, Western and Chinese kitchens, Chef Taro brings a broad technique and a deep respect for ingredients to the Ishizawa counter.
The menu is built around omakase—trusting the chef to guide you. Lunch courses range from Kan (12 nigiri, appetiser, soup, dessert) to the premium Sha. Dinner options include Kyoku (15 nigiri), the flexible Jitsu (guests ask the chef to curate a menu to their preferences), and the top-tier Ten.
