The story
PaB Donau brings Austro-Hungarian cuisine to Bratislava with a quiet, memory-driven approach led by executive chef Anton Meszároš. He runs the kitchen without shouting, drawing directly from his own childhood meals rather than chasing culinary trends. Sous chef Marek Hipik supports this grounded philosophy, bringing years of brewery and alpine experience to ensure every plate feels both familiar and precisely balanced. The result is a menu where tradition serves as a foundation, not a cage.
The kitchen treats imperial classics as living recipes, reworking Austro-Hungarian cooking for modern palates. The three-course Tafelspitz moves deliberately from toast with spike through a clear beef broth to tender boiled beef served alongside roast potatoes and horseradish apple sauce. A Vienna-style schnitzel arrives broad enough to cover the entire plate, while twelve-hour roasted pork cheeks rest on creamy tarhoňa alongside pickled gherkins and crisp mangalica bacon. Even desserts get a playful revision, like the beer krémeš layered with vanilla custard, flaky pastry, and toasted almonds.
Set against the glass facades of Eurovea, the dining room opens onto a wide terrace that faces the Danube. Long summer evenings play out here with live music and a steady flow of guests who treat the waterfront view as part of the meal. The beverage program mirrors the food’s regional focus, featuring craft brews from Pálffy Brauerei and structured whites from VIAJUR winery. This straightforward quality earned the establishment thirteen points from Gault&Millau and two gold forks from Falstaff, proving that honest execution still commands serious attention.
