The story
Ramen Kazu occupies a spot near Hlavné Square where chef Takayuki Utashiro channels his hometown of Sapporo into every bowl. Utashiro brought more than twelve years of culinary history to this Slovakian capital, insisting that the ramen must replicate the precise flavours of his upbringing. He sources noodles directly from Japan, relying on traditional processing to deliver a firm bite that stands up to hours of simmering stock.
Shio offers a clean salinity that highlights the ingredients, whereas shoyu introduces a distinct soy sauce depth. Miso remains the house specialty, often prepared as Miso Butter Corn to blend fermented soybean paste with creamy richness and gentle sweetness. Gault&Millau praised this variation for balancing saltiness, umami, and a subtle sugary finish alongside perfectly springy noodles. Chashu pork and spice-marinated eggs complete the main bowls. The mini karaage don rounds out the offerings with a rice bowl featuring soy-glazed fried chicken and ginger.
The dining room maintains a minimalist aesthetic behind a modest storefront marked by a simple Japanese banner. Gault&Millau noted that this unassuming exterior conceals a lively atmosphere, particularly when the lunch and dinner crowds gather. Service follows a strict first-come-first-served policy, mirroring the no-reservation culture of Japan described on the chef's website. The team works efficiently to plate hot ramen for guests seated within the compact space.
