The story
RIVERBANK Restaurant Bratislava serves modern Slovak cuisine anchored by executive chef Jaroslav Žídek, who has led the kitchen since 2017. Originally from Prague, Žídek built his reputation across kitchens in Spain and Scandinavia before returning to Central Europe to refine contemporary Slovak cooking. His approach draws directly from his mother’s recipes, favoring straightforward techniques that let regional ingredients speak for themselves. He now mentors a generation of younger cooks while maintaining a steady hand over the seasonal menu.
The kitchen translates that philosophy into precise compositions like the smoked African catfish, which rests on a cool buttermilk potato foam alongside dried tuna and crisp microgreens. Plant-based offerings receive equal attention, as seen in the sprouted red wheat stew paired with roasted parsnips and king oyster mushrooms. For main courses, guests often order the grilled game saddle served alongside duck liver terrine, finished with shallot purée and wild rosehip jam. Sweet endings lean toward the chocolate tart, where toasted nuts and bitter caramel are cut by a bright sea buckthorn sorbet.
Located within the Grand Hotel River Park, the dining room opens directly onto a summer terrace overlooking the Danube. The space balances quiet elegance with uncluttered sightlines, allowing natural light to frame the table settings during daytime service. Evening dining shifts focus to the extensive wine program, which pairs seamlessly with both the à la carte selections and the five-course tasting menu. The consistent recognition from Gault & Millau reflects how steadily the team maintains these standards across every shift.
