The story
SHUGETSU Ramen & Tsukemen brings authentic Japanese cuisine to Bratislava through founder Shuhei Nakagawa’s uncompromising standards. He opened his first shop in Matsuyama in 2005 before launching the Shugetsu chain in Hong Kong two years later. His kitchen excludes artificial flavor enhancers and relies on natural umami instead. Noodles arrive from Hokkaido to ensure proper elasticity, while Kajita soy sauce from Ehime provides depth.
Guests typically start with the pork gyoza, which features firm wrappers that release a rich pork and onion broth when cut. The dipping sauces pair perfectly with the tsukemen options available throughout the day. A traditional chicken-soy ramen gains complexity from fish powder mixed directly into the base. Each serving arrives topped with a marinated soy egg, roasted pork belly, fried bamboo shoots, and fresh spring onion, reflecting a steady commitment to Japanese cooking principles.
The Bratislava location has welcomed diners since September 2020 as the network’s first international outpost. Critics have taken notice, with Gault&Millau awarding the kitchen thirteen points for its consistent technique and ingredient quality. The dining room maintains a quiet efficiency where staff track every order and adjust pacing accordingly. Natural light fills the terrace during warmer months, though the interior remains focused on counter seating where cooks assemble each plate.
