The story
Chef Matej Bakoš founded this project inside a converted industrial building near the city centre. His cooking rests on four pillars that guide every service: seasonality, locality, freshness, and careful presentation. The kitchen sources produce from regional farmers and adjusts the menu whenever the harvest changes. This steady rotation earned a notable 13 point rating from Gault&Millau, recognizing how traditional techniques blend with current inspiration.
Diners often begin with the pastrami croque madame, which layers French technique with a distinctly contemporary finish. A more substantial option features slow braised beef served alongside fresh dill sauce and a house-made steamed dumpling. The evening menu also rotates through dishes like duck breast paired with roasted pumpkin purée and grilled shrimp tossed with chorizo and white wine. Homemade lemonades in cucumber and blueberry provide a sharp contrast to the richer plates.
The dining area maintains a relaxed atmosphere that fits both quick weekday lunches and longer weekend dinners. Light fills the space during morning coffee hours, while the tables settle into a quieter pace after sunset. Guests can expect unhurried service and straightforward plating that lets the ingredients speak for themselves within a casual setting. This commitment to honest Slovak cooking shows in every plated dish.
