The story
La Simona brings a refined Italian kitchen to Liptovský Mikuláš. After spending many years primarily in Italy, the Vlh couple transferred their culinary vision to this Slovak town. They dedicated over three years to refining a single signature pizza dough before finally opening their doors.
The menu splits cleanly by the calendar. Monday through Thursday guests order à la carte plates like carbonara with guanciale or spaghetti tossed with cherry tomatoes and local chilies. Friday and Saturday shift entirely to wood-fired Neapolitan pizza, featuring spicy nduja or delicate speck varieties. This disciplined rotation ensures consistent quality across both Italian bistro traditions.
Careful interior design and layered lighting soften the multi-purpose building into a warm gathering space. A heated terrace extends seating through colder months while the bar highlights Cartapani coffee and Aperitivo staples like Negroni. Bottles from Ca dei Frati sit beside shelves of Tuscan olive oil. These deliberate choices earned a 11.5 rating from Gault&Millau, proving that quiet precision speaks louder than loud décor.
