The story
ORIGIN brings contemporary Slovak tasting cuisine to the quiet streets of Lučenec, founded by siblings Lukáš and Dominika Heuser. After years building their careers in Switzerland, the couple returned to share a vision rooted in family and craft. Their kitchen now serves four or seven course tasting menus every Wednesday through Saturday. The project carries a Gault&Millau score of sixteen, recognizing how steadily their culinary voice has matured since opening.
Head Chef Lukáš Heuser designs a frequently rotating menu that leans into assertive seasoning and careful technique across his modern tasting menus. Guests often encounter perfectly prepared Slovak freshwater fish like zander, trout, or sturgeon alongside carefully balanced vegetable plates. The meal typically begins with simple snacks, most notably an herb and butter onion bread that sets a grounded tone. His approach earns consistent praise for refusing to soften its edges while remaining deeply accessible.
The dining room favors comfort over formality, allowing guests to settle in without rushing through the service. Non-alcoholic beverage pairings now complement the wine list, matching the intensity of the bold dishes without overwhelming the palate. Three hours usually pass quietly as the kitchen moves through each course at a steady rhythm. This deliberate pace reinforces the founders' intent to make Slovak cooking feel completely at home.
