The story
Martin Plastiak founded Wild Kitchen Modra after spending over twenty years working in elite kitchens across the United States, driven by a commitment to bringing high-quality ingredients to the Slovak food scene. He built a menu around what he can grow himself and gather from the surrounding Small Carpathian hills, maintaining an on-site garden and foraging for wild plants alongside partnerships with regional artisan producers. This approach yields a modern Slovak kitchen where technique serves the ingredient rather than obscuring it, earning the restaurant a score of 13 from Gault&Millau for its honest character and clear flavor profile.
The dining space occupies a former cooperage workshop, retaining the architectural memory of wooden barrel-making while offering a bright, open kitchen where guests watch the team prepare each course. The interior features warm wood accents and comfortable seating that mirror the landscape outside, creating a relaxed environment where service feels personal and unpretentious. This restoration earned a prize for heritage preservation from the Bratislava region in 2023, balancing historical integrity with the functional needs of a contemporary eatery.
