Chef Jozef Breza leads the kitchen from the quiet village of Batizovce, guiding a philosophy that honors the landscape and minimizes waste. Breza channels childhood memories and authentic Slovak cooking traditions into dishes that frequently showcase forgotten regional produce. His personal hobbies of gardening, mushroom picking, and fishing translate directly to the plate. The kitchen operates with minimal waste, prioritizing goods from the restaurant's own garden and foraged meadow herbs like borage. Proteins including freshwater fish, goat, lamb, and Mangalica pork receive careful treatment to highlight their natural qualities.
