Located in Ružomberok, Yell cuisine approaches modern Slovak cooking with a disciplined focus on seasonal ingredients and house production. Head chef Miroslav Halam spent thirteen years training across top kitchens in England and Ireland before launching this venue alongside co-founder Peter Šrobár. His methodology prioritizes making sauces, breads, and dough from scratch each morning. This routine ensures every plate reflects careful technique rather than convenience.
The menu treats contemporary Slovak cuisine as a living tradition rather than a static collection of recipes. Diners regularly request the sous-vide pork loin cooked at precisely fifty-four degrees, which rests on rosemary polenta beside a fig demi-glace. Traditional staples also receive careful attention, such as the well-seasoned beef sirloin served with freshly sliced house dumplings.
