The story
Restaurant Milka calls itself “a rebellious kid striving for perfection on their own terms.” That spirit runs through every plate. The kitchen builds its tasting menu around regional seasonal ingredients, drawing inspiration from the short, intense Alpine seasons. Sourcing goes beyond Slovenia’s borders into neighbouring Austria and Italy, supporting local producers while transcending man-made boundaries. The commitment to sustainability is tangible: the restaurant’s ceramics are made from minerals found near Lake Jasna, and wooden plates and utensils are crafted from the restaurant’s own timber.
Head chef David Žefran returned to Slovenia after working in top kitchens, most recently a three-Michelin-star restaurant in Stockholm. His approach combines artistic precision with a deep environmental consciousness. He redesigned both the kitchen and the dining room, bringing a scenographic eye to the entire experience. The result is cooking that feels both thoughtful and electric.
The current tasting menu, priced at 295 €, reads like a love letter to the region. Dishes such as Sour Soup (cabbage, yeast butter), Trout Belly (trdinka corn, horseradish), Chamois (preserved berries, daikon), and Rainbow Trout (sauerkraut, chanterelles) lead to a finish of Buhtelj (deer fat, lingonberry). Each course is named simply, but the flavours are layered and precise. The menu is enriched by a network of dedicated Slovenian producers, from beekeepers to millers and cheese makers.
Milka redefines fine dining as something approachable. The team puts the guest’s experience at the centre, aiming for professional yet friendly service that feels like being among friends. The atmosphere is curated but relaxed, a deliberate break from stiff dining room etiquette. Wine pairings focus on Slovenian wine culture, alongside selections from Friuli, Carinthia, and classic French regions. For non-alcoholic options, the chef and barman create juice pairings that match the same level of care. Even the coffee and tea program gets special attention: house-dried foraged teas, artisan clay pots, and responsibly sourced coffee roasted in Slovenia.
