The story
Gostilna AS has been a pillar of Ljubljana's hospitality since the late 1990s. It is the creation of the Raspopović family, led by Svetozar “Pope” Raspopović, who first introduced his light Mediterranean cooking in the Karst town of Dutovlje before moving to the capital. The restaurant's emblem – a tree intertwined with keys – symbolises growth, tradition, and family. Its central location between Wolfova and Slovenska streets makes it a natural destination for those seeking authentic, refined flavours.
The kitchen follows a simple philosophy: quality ingredients, treated with respect. Meals start with homemade bread and Karst olive oil. Cold starters include a tuna tartare with avocado and wasabi, and beef carpaccio with Treviso radicchio and black truffle. Among the hot starters, grilled scallops and Mediterranean miso soup with shellfish stand out. Pastas are homemade: the “Paštica Kras” with Karst sausage and saffron, or the “Paštica Roma” with scampi and pecorino. Main courses range from grilled Adriatic fish and shellfish to dry-aged Karst beef steaks, many cooked on a Japanese grill. Desserts are simple and satisfying: panna cotta with plum jam, chocolate soufflé, or a light blueberry cake.
The wine list is a carefully curated journey through Slovenia’s wine regions, with additional bottles from Italy and France. A glass of the house Malvazija or a selection from the extensive cellar of sparkling wines, Champagnes, and local whites and reds elevates every meal.
The dining room balances prestige with a welcoming, homely feel. In warmer months, the summer-winter garden opens onto an elegant terrace with views of Ljubljana Castle – ideal for private events or a leisurely dinner under the evening sky.
