The restaurant draws on the culinary vision of Ana Roš, the self-taught chef who earned Hiša Franko three Michelin stars and was named World’s Best Female Chef in 2017. At Jaz, that same devotion to hyperlocal, seasonal cooking appears in a relaxed, everyday setting. The kitchen works in rhythm with Ljubljana’s markets, sourcing from farmers, fishermen, and artisans the team knows and trusts. The result is modern European cuisine that feels both grounded and global.
The à la carte menu changes regularly, but signatures include Ana’s favourite Waldorf salad with apples, celeriac, and kefir dressing; a bruschetta with oyster mayo and local sardines; and agnolotti filled with creamy pumpkin. Mains like branzin in orange emulsion or a charcoal-grilled meat of the day reflect the kitchen’s respect for simple, excellent ingredients. Jaz has earned a Michelin Recommended distinction, confirming its place on the global dining map. It was also named among the world’s best hotel restaurants by The Travel Curator for 2026.
