The story
JB Restavracija is the story of the Bratovž family. Founded in 1992 by chef Janez Bratovž after five years abroad, the restaurant was the first Slovenian establishment to enter the World’s 50 Best Restaurants. Today, the kitchen is a true family affair: Janez leads, his son Tomaž works as his right hand, daughter Nina, an Advanced Sommelier, curates the wine list and oversees guest relations, and wife Ema manages the business. This collaborative spirit is the bedrock of the experience.
The restaurant occupies a space designed by Slovenia’s greatest architect, Jože Plečnik, at 19 Miklošičeva Street. Despite its central location, the interior offers a calm and elegant escape, where clean lines and refined décor create a setting for focused dining.
The cuisine here blends classic techniques with modern sensibilities, rooted in Slovenian ingredients. Guests can choose from three distinct tasting menus, each named after a family member. The Menu Janez is the most expansive, featuring dishes like Adriatic prawns with cucumber and green pepper, the signature “JB” Raviol, and turbot with polenta, chard, cheese, and tomato. The Menu Tomaž offers a shorter sequence, including matured beef with truffles and olive oil, while the Menu Nina introduces a lighter note with charred broccoli, raspberry gel, and mustard emulsion. An à la carte selection is also available for those who prefer to choose their own path.
JB Restavracija holds a Michelin Recommended distinction, reflecting its consistent quality and the family’s dedication to sourcing first-class local ingredients. Janez has even published a book, JB Literature, that traces twenty key ingredients from the Adriatic to the Alps, visiting the producers behind each one. This commitment to place and provenance, combined with the warmth of a family-run kitchen, makes JB a cornerstone of modern cuisine in Ljubljana.
