Restaurant Jadro brings Adriatic seafood cuisine to the heart of Ljubljana, drawing attention from Gault&Millau judges who praised its clear culinary focus. Dalibor Milenković learned early that restraint serves flavor better than complexity. He began mixing egg whites and sugar in his mother’s hotel kitchen at age five, a start that evolved into stints from Montenegro to London. Today he runs the pass with a strict code: respect the ingredient and follow the season, keeping the plate clean. The open hearth does most of the heavy lifting, turning morning selections from trusted suppliers into focused plates.

The menu leans heavily toward seafood preparation while leaving room for robust meat courses.
