Restavracija Vander occupies four restored townhouses in Ljubljana, where Australian-born Amanda and local partner Aleksander transformed Roman-era foundations into a contemporary Slovenian kitchen. Excavations beneath the River Ljubljanica revealed a historic harbour and medieval artisan workshops, providing the structural backbone for the project. Architectural bureau SADAR+VUGA designed the interior layout to connect the old facades, allowing guests to dine above layers of civic history. The property anchors itself in the central streets while quietly respecting the original masonry.

Seasonal menus and regional techniques

Contemporary Slovenian cooking defines the evening service, where fresh regional produce forms the foundation for dishes like handcrafted Jamar cheese ravioli filled with ceps and finished with parmesan. The kitchen treats familiar flavours as a starting point rather than a fixed template, adjusting preparations to reflect daily harvests. A dedicated pastry list highlights the Vander grmada, a dense chocolate cake layered with vanilla cream, walnuts, and raisins that demands a slower pace to finish. Market greens and rosemary gnocchi appear alongside richer proteins when the season calls for lighter notes.
