The story
In the quiet village of Markišavci, just outside Murska Sobota, the Kodila family has been perfecting the art of curing and cooking for three generations. Today, the restaurant "Meet meat eat" sits above the family delicatessen, a place where tradition and craft meet a modern, welcoming atmosphere.
The family's specialty is ham ripened under a thatched roof. The clay walls and thatched roofing of the curing rooms create ideal conditions for long maturation, producing hams with characteristic colour, smell, and flavour. They also dry hams with traditional mould, a technique that speaks to deep knowledge of charcuterie.
Kodila works only with quality meat from local farmers, adding nothing but salt, spices, and time. Steaks of various cuts come from their own ripening rooms, and fresh meat is available daily. One of the oldest preservation methods — smoking on an open hearth with beech wood and sawdust — is still in use here, lending a distinct smokiness to their products.
The restaurant, run by Janko Kodila (awarded Slovenian craftsman of the year in 2014), presents these ingredients with a respectful nod to old recipes. The menu focuses on meats and grills, with a wide selection of domestic spirits and premium wines to accompany the meal.
