For good souls and curious stomachs

Gostilna Repovž is a family affair in the truest sense. Set in the remote village of Šentjanž, hidden among the hills and forests of the Dolenjska region, this is a place where the Repovž family has lived for over 500 years. They opened their own inn 300 years ago, and the tradition has been passed down through generations ever since. Today, the restaurant is run by the family – with Grega Repovž at the helm, chefs Meta and Sabina Repovž in the kitchen, and sommelier Anže Repovž selecting the wines. The team also includes long-time locals who have worked alongside the family for years, some for almost their entire lives.

The restaurant’s philosophy is rooted in respect for the land. “We live with nature, respect it, and learn from it,” they say. To that end, they grow their own vegetables, fruit, grains, and even wine in an on-site Eko-lab – an organic experimental garden that allows them to constantly improve the ingredients on the plate. What they cannot produce themselves, they source from trusted local suppliers who share their values. This farm-to-table approach is the foundation of their European cuisine, which Michelin has recognised with a Recommendation.

Modern tastes of tradition

The menu at Gostilna Repovž is built around degustation experiences that showcase the local environment. Diners can choose from four-, five-, or ten-course menus, each designed to tell a story of the region. The “Kraljevski meni” (Royal Menu) is the full Repovž experience, a ten-course journey that introduces the house, the farm, and the surrounding landscape. For those who prefer a more social meal, there is a sharing menu called “Deli in uživaj” – dishes served to the middle of the table, perfect for groups.

Each course can be paired with a carefully selected wine from the restaurant’s extensive list, which focuses on organic, biodynamic, and natural wines. The sommelier is also developing a cocktail pairing option, available with or without alcohol.

A place to stay

The Repovž family wants guests to linger. They have renovated rooms on the property, where tradition blends with modern comfort, allowing visitors to enjoy the peace of the countryside and extend their evening into a full overnight stay. As Grega Repovž puts it: “We want to be here for another 300 years. At least.”

Surrounded by gardens and orchards, the estate combines an organic farm, a small shop, an inn, and accommodation, creating a place where the countryside is not a backdrop but a way of life. Today, Repovž is widely regarded as one of Slovenia’s leading ambassadors of contemporary rural cuisine. The menu follows the rhythm of the seasons, yet every dish shares the same foundations: respect for ingredients, tradition, and the local environment. The experience begins with a series of elegant welcome bites, while the house bread arrives at the table still warm from the oven. Among the cold starters, particularly memorable are the delicate slices of Krškopolje pork served in a trout sauce with pickled wild garlic buds and a sprinkle of hazelnuts. Equally impressive is the smoked trout accompanied by hollandaise sauce and beans, a dish rich in both flavour and character. During the colder months, the kitchen fills with the aromas of grilled duck breast. Lovers of traditional Slovenian cuisine will appreciate seasonal pig-slaughter specialties, crispy fried Krškopolje pork cutlets, and lamb presented in three different preparations. Great care is devoted not only to wine pairings but also to sophisticated non-alcoholic accompaniments. At Repovž, dinner does not necessarily end with dessert. Guests who choose to stay overnight are greeted the next morning by the same sincere hospitality, the aroma of freshly baked bread, and a breakfast table laden with homemade specialties: a fitting continuation of the experience that defines this remarkable family estate.
