Le DORER calls itself “where a golden experience awaits,” and the setting matches the ambition. Perched on the second floor of a building in Busan’s Marine City district, the restaurant overlooks the Haeundae coastline. It is the first Dom Pérignon gastronomy partner in Busan, a collaboration that gives the wine program a sparkling foundation. The team describes the experience as “the pinnacle of culinary art.”
The kitchen draws inspiration from the nature and culture of Busan. Le DORER works directly with local farmers and fishermen to source seasonal ingredients, reducing carbon footprint while supporting the regional economy. Menus minimize meat in favor of seafood, and the restaurant practices thorough waste separation: kitchen scraps are composted, leftover ingredients become pet treats, and biodegradable sugarcane straws replace plastic. LED lighting, artificial flowers instead of fresh-cut, and a preference for free-range eggs from Sancheong-gun reflect a thoughtful, low-impact approach.
The tasting menu reads as a tour of the South Korean coast, with dishes built around acorn, anchovy, dureup (angelica tree shoots), mackerel, pine nut, tilefish, duck, abalone, and Hanwoo beef. A sujeonggwa (cinnamon-ginger punch) and kumquat course rounds out the sweet finale. Each plate is described in simple, direct Korean and English, letting the ingredients speak. The wine list offers flights such as “The Challenge of Balance” (six glasses) and a Pinot Flight, alongside an extensive bottle selection.
Le DORER earned a Michelin Recommended distinction in 2026, a nod to its precise, ingredient-driven cooking and the team’s dedication. The staff—described as passionate and genuine—aims to evolve constantly, studying new techniques and service standards to meet guests’ expectations.
