At Namakzip, the focus is singular: pork bone soup, or dwaeji-gomtang, made with care and clarity. The restaurant’s signature broth is a blend of two stocks — a vegetable base infused with kelp and dried anchovies, combined with pork bone stock. The result is a clear, clean soup that is lighter than the city’s typically heartier pork soups, yet still deeply savoury. Slices of pork belly, slow-cooked and thinly presented, finish each bowl.

Two other dishes share the same thoughtfulness. Gogi-kalguksu swaps rice for hand-cut noodles in the same broth, topped with tender pork. Suyuk — boiled pork slices — is prepared daily, using multiple cuts of quality pork and served until the day’s batch runs out.
