The story
Gaeseong Mandu Koong sits on a quiet alley in Insadong, Seoul’s historic arts district. The restaurant is devoted to Gaeseong-style mandu, a Korean dumpling tradition known for thin, delicate wrappers and generous, flavorful fillings. Every dumpling is made entirely by hand after the order is placed, using carefully selected ingredients. The kitchen prepares its own kimchi and kkakdugi, which go into the kimchi and kkakduk dumplings, ensuring the flavors are authentic and robust.
Since 2017, the Michelin Guide Seoul has awarded Gaeseong Mandu Koong a Bib Gourmand each year, a streak that continues through the 2026 edition. This recognition, given for good quality and good value cooking, speaks to the restaurant’s unwavering commitment to excellence. It is one of the few establishments in Seoul to hold this distinction for ten consecutive years.
The selection of mandu includes meat dumplings, kimchi dumplings, mushroom dumplings, and the signature kkakduk dumplings made with the restaurant’s own kkakdugi. For those who want to sample several varieties, assorted dumpling sets are available, designed to be shared with family. The restaurant also offers its signature joraengi tteok, a traditional Korean rice cake, and a homemade broth that forms the base of its dumpling soup. The menu extends to rice cake and broth sets, completing the Gaeseong dining experience.
The restaurant’s philosophy, as expressed on its website, is rooted in fresh vegetables, high-quality ingredients, and 100% handmade preparation. There is no shortcut to flavor – only careful, traditional craftsmanship. It is a place where a simple dumpling becomes something memorable, and where the Gaeseong tradition is kept alive with every order.
