The story
Chef Minchul Kang’s GiwaKang in Seoul’s Gangnam district presents an innovative perspective on Korean cuisine. The name itself tells a story: Gi (氣), the invisible yet potent energy that connects all things, and Kang (江), the river that carries that energy forward. At GiwaKang, this philosophy translates into a culinary approach that honors tradition while embracing creativity, crafting a stream of flavors that is both bold and harmonious.
The experience is built around a tasting menu, available for lunch and dinner. The dining hall accommodates up to four guests per table, offering an intimate setting to explore Chef Kang’s vision. For larger groups, private rooms are available for up to sixteen guests, with the option of a tailored private menu upon request.
Wine plays a significant role in the GiwaKang experience. Head Sommelier Jeongin Lee curates a list that ranges from vibrant natural wines to time-honored Old World classics, designed to enter into a dialogue with each dish. Guests can choose from several wine pairing options, with 4, 6, or 8 glasses available. Wine corkage is permitted for one bottle per table.
The restaurant’s recognition by the Michelin Guide speaks to its refined execution of Korean contemporary cuisine. A newer extension of the restaurant, GiwaBar, offers an à la carte experience within the same building, further exploring the fluidity of modern Korean cooking in a quiet, atmospheric setting.
