The story
At Ticiano, the philosophy is simple: sometimes you need to return to your origins to keep moving forward. That belief led the team back to Villallano, a small village north of Palencia, near Aguilar de Campoo. Here, they continue their passion for gastronomy, fully aware of the challenge and reward of working in a rural setting.
The restaurant was founded in July 2007. The building itself was originally a stable owned by the family, purchased by their grandfather from a man named Ticiano. To honour those who lived and worked in this place, the restaurant keeps his name alive.
Ticiano has earned a Michelin Recommended distinction, a recognition that speaks to the quality and sincerity of its cooking. In a region where tradition meets quiet innovation, the restaurant stands as a testament to the power of place and memory.
The cuisine here draws on the landscape of Palencia, offering a menu and a tasting experience that reflect the seasons and the local larder. While the exact dishes change with time and availability, the commitment to honest, flavour-driven cooking remains constant. The restaurant also hosts special jornadas (gastronomic days) that celebrate specific ingredients or themes.
Set in a converted stone stable, the dining room retains a sense of rustic warmth. Villallano itself is a quiet village, and the restaurant offers a peaceful escape for those seeking authentic Spanish hospitality. With air conditioning for comfort, Ticiano is a place where the past and present meet on the plate.
