The story
On the waterfront of Marina Lanzarote in Arrecife, Lilium is a steady presence in the island’s dining scene. Chef Orlando Ortega, a native of Arrecife who sharpened his skills at the legendary El Bulli, opened the restaurant in 2006 alongside Sandra Guadalupe. Their project is rooted in what they call “Sentido Canario” — a way of cooking that honours the Canary Islands’ traditions while pushing them forward with contemporary technique.
The kitchen’s focus is local. Vegetables and fruit come from volcanic soils, seafood from nearby waters, and meats are carefully sourced. This commitment to proximity is central to their cooking, and it has earned Lilium a place in the Michelin Guide. The menu offers a degustation that showcases these ingredients in dishes like Ensalada de Tomates Arrugados con Requesón y Sorbete de Tunera, a Potaje de Lentejas de Lanzarote, and roasted Cochinillo Negro. Desserts include a Coulant de Chocolate Negro with gofio — a nod to Canarian pantry staples.
The dining room and terrace overlook the marina, offering an elegant but relaxed setting for lunch or dinner. Sandra Guadalupe leads the service, ensuring the experience matches the kitchen’s ambition. Lilium also operates under Biosphere Committed certification, supporting sustainability through local sourcing, recycling, and reduced plastic use.
